My friend Amanda recommended this blog, Messy Aprons. So I checked it out & they had posted a recipe that is similar to one of my most favorite things in the world: Chocolate Chocolate Chip Pound Cake. It was a recipe my Mimi used to make & one that friends are always asking for. Go check out their blog for some other great recipes! 3 Southern girls can't go wrong! I'm looking forward to trying their version of Shrimp & Grits. That's one of our favorites at the Martinez casa.
Here is my version of the Chocolate Chocolate Chip Pound Cake (it varies by 1/4 cup in a couple of ingredients from the Messy Aprons version):
1 package yellow cake mix
1 small package chocolate fudge instant pudding mix
3/4 cup vegetable oil
3/4 cup water
4 eggs
8 oz sour cream
1 cup (who am I kidding, I use almost the whole bag) semisweet chocolate chips
confectioners' sugar (optional)
Directions:
Combine the dry cake mix & dry pudding mix in a mixing bowl & mix together well with a fork or whisk until no big clumps of yellow cake mix are visible (They will show up in your baked cake. My Mimi never had even the smallest of yellow spots. I don't know how she did it!). Add oil, water, eggs, and sour cream & mix well. Stir in the chocolate chips and spoon the batter into a greased and floured 10-inch tube pan or bundt pan. Bake at 350 degrees for 55 min or until wooden toothpick inserted near the center comes out clean. Cool in the pan for 10 minutes and remove to a wire rack to cool completely. Dust with confectioners' sugar.
Here's another version I came across recently that uses CHOCOLATE cake mix instead of yellow. I think that will be so chocolatey & rich which is good because those are pretty much my middle names.

This is my favorite cake in the world. And, my palate is as refined as a master sommelier, so just bake it and give your mouth fair warning. If this cake were a animal, it would be a Golden Poison Frog...deceptively calm and harmless, but with a bite that will leave your tastebuds rendered useless and paralyzed. Eat smart, earthlings.
